A healthy diet builds a healthy heart. It starts with eating foods that are low in cholesterol and saturated fat. Unfortunately, for your taste buds, that usually means anything that is greasy and fattening. You also need to lower your intake of sodium (salt) and substitute fish or chicken for red meat. With these few changes in your diet, you’ll not only help your heart, you’ll also enjoy more energy.

Heart Healthy Recipe This tangy recipe is low in calories, cholesterol and saturated fat, but scores high in taste.

Very Lemony Chicken 1 1⁄2 lb chicken breast, skinned, fat removed 1⁄2 cup fresh lemon juice 2 tablespoons white vinegar 1⁄2 cup fresh lemon peel, sliced 3 teaspoons fresh oregano, chopped 1 medium onion, sliced 1⁄4 teaspoon salt 1⁄2 teaspoon paprika Black pepper (to taste)

  • Place chicken in 13- by 9- by 2-inch glass baking dish.
  • Mix lemon juice, vinegar, lemon peel, oregano and onions. Pour over chicken, cover and marinate in refrigerator for several hours, turning occasionally.
  • Sprinkle with salt, pepper and paprika.
  • Cover and bake at 300 degrees for 30 minutes. Uncover and bake for another 30 minutes or until done. Serves 4.
